This one day course is designed by the RedCat Team (even though they recommend it, the CIEH/HABC don’t have a refresher qualification); – Food safety; latest hazards and trends, new pathogens, etc. – Latest legislation & technology – Food Safety Management/HACCP; the steps, with practical examples, – Monitoring HACCP procedures – Verification, review, documentation
How: A one-day class room session, based on a series of syndicate exercises, activities and case studies (regular customers will know we don’t just lecture you!)
We won’t make you sit the exam again, but we’ll give you one or two “past paper” style
Tutors: Sarah Daniels is a Chartered Environmental Health Practitioner, having spent over 25 years in the profession. She has been trained in HACCP by the Food Standards Agency. The RedCat partnership have been providing food safety training and consultancy in Norfolk, East Anglia and nationally for over 19 years.

Why This Course?
This focus of this course is in developing, implementing, monitoring and verifying food safety procedures. It will cover a wider range of food safety hazards, to a greater depth, than Level 3 courses. This course is an important step towards our client businesses become more self-sufficient with food safety management. Ultimately it helps to protect your brand and your customers’ confidence in your products and services.

Owners & managers of larger/multi-site catering or manufacturing business, especially where food safety management systems are bespoke.

How Is This Course Delivered?
There’s no substitute for a traditional classroom-based course for Level 4 (Zoom just doesn’t cut it here). The course is delivered at our No.8 training facilities where we have a full range of COVID-19 controls in place. This is a challenging course, equivalent to Foundation/1st Year Degree level studies, so a degree of self-study will be required. There are five, 1-day sessions, followed by an assessment on a 6th day; assessment is a 2.5 hour-long mix of mutli-choice questions (but tought ones!) and long-answer questions.

NANSA, a disability charity for people in Norfolk, hasalmostraised enough money for a minibus. Can you help with the final stages?
The minibus we are looking to buy costs £20,000. So far we’ve raised £17,000, so we’re not far off at all! We just need your help with these final stages of fundraising.
Why do we need a minibus?
We currently havetwo cars,a Berlingo and Kangoo. These are used totake members from our Youth and Adult Services on outings, such as bowling or swimming.
Theseare the challenges we are currently faced with:
Our numbers have outgrown the size of thesevehicles.
The cars fit a maximum of three members in each, butacross all services there are 140 people that attendNANSA!
Although the cars have wheelchair space, they don’tcater for all wheelchair specifications, meaning that some people are unable to join in on outings.
Our support workers struggle to transport wheelchair users into the cars, as you can see in the film.
A minibuys would benefit us in lots ofdifferent ways:
First and foremost, it’s a 16 seater, so we would be able to take large groups out. This would give members the opportunity to experience more and visit lots of different places.
The minibus fitsallwheelchair specifications (check out the space in the back!) so our outings would be fully inclusive.
There is an automated lift which would make transporting wheelchair users much more straightforward, as well as saving our support workers’ backs!
The range of activities would be broadened, and people would have much more choice in what they want to get out of NANSA’s services.
Some members aredoing courses where they cangain a nationallyaccredited Gateway qualification, promoting employment opportunities. With a minibus, members would be able to get much more out of these courses,as they would be able tovisit places in the community, reinforcing what they have learnt during sessions.
A minibus would ultimately allow our members to access the wider community on a regular basis, and therefore integrate into society.

Aim; To equip delegates to put food safety management systems in to place, through detailed understanding of the hazards, legal requirements (including HACCP) and the issues surrounding the implementation of control measures.
Objectives; *Understand the meaning of ‘management of food safety’, and the elements of a management system, including HACCP. *Detailed understanding of the four main hazards; biological, allergens, chemical and physical. *Understand the format of UK and European food safety legislation. *Understanding operational procedures for cleaning and disinfection, pest control, design and construction of facilities etc. *Managing people; information, training, supervision etc. *Maintaining food safety management procedures; monitoring and verification. *Liaise with enforcement officers *Have sufficient technical knowledge to deliver level 1 and 2 food hygiene training (with appropriate training skills)
Organisation
Duration; 5 day teaching programme + 1 day for assessment.
Exam/Assessment; Two hour controlled assignment and a 2.5 hour written examination (both normally completed on the same day). This is an Ofqual accredited qualification.

Differentiation; Prior knowledge of food safety is required: CIEH Level 3 Award in Food Safety would be desirable. Candidates should be familiar with, or aspire to, the role of management. This is a challenging course, technically and academically. Candidates require reasonable spoken and written English, and a moderate level of ICT ability. Access to a computer, for assignment research, email, etc is strongly recommended.
Audience; This qualification is for managers, supervisors and QA/QC/ senior hygiene personnel, who devise, implement and monitor/audit food safety systems, and for those who want to become trainers.
